Insalata Mista con Tonno e Uovo - Italian Bar Mixed Salad with Tuna and Egg

If you’ve ever stepped into an Italian bar for a quick panino, a tramezzino, or a light lunch, you’ve likely spotted, and maybe even enjoyed, a salad just like this. It’s usually ready to go…neatly prepared and waiting in the glass case. I’ve just as often seen it pre-made and packaged in Italian grocery stores for an easy midday meal.

I’ve always loved its simple charm. I’ve recreated it many times at home, though I’ve never shared it here before. It may be simple uncomplicated salad, but every time I make it, it gives me big happy smiles because it brings me back to Italy with every bite.

Insalata Mista con tonno e uovo

INGREDIENTS

Below is enough for 4 meal sized salads

  • 2 - 5oz bags of Mixed Greens

  • 2 Tomatoes (pomodori) - diced

  • 1 Cup frozen or canned Corn (mais)

  • 1 Medium Carrot (carrote) - grated - Not pictured as I forgot to buy carrots…haha!

  • 4 Hard-boiled egg (uovo sodo) - sliced

  • 1 Can of Tuna (tonno) drained

  • 1/2 Can black Olives (olive) - sliced

  • 4 - 8 Oz Mozzarella - cut into pieces

  • Olive Oil

  • Salt & Pepper

PREPARATION

  1. In a large bowl add in a good helping of the mixed greens.

  2. Top with all the ingredients and then drizzle with the olive oil.

  3. Add salt and pepper to taste and enjoy :)
