Holiday Mint Chocolate Fudge

This delicate and delicious fudge is the perfect indulgent gift to give this holiday season! A lovely decorative tin filled with this rich fudge would put a smile on anyone’s face :)

THE INGREDIENTS

  • 1 - 12 oz bag semi-sweet (or dark chocolate) chocolate chips

  • 1/2 bag of white chocolate chips

  • 1 - 14 oz can sweetened condensed milk

  • 2 tsps Vanilla extract

  • 2 1/2 + 1/4 tsps Peppermint extract

THE PREPARATION

  1. Line a 9” square baking pan with foil, lightly coat with butter and set aside.

  2. Add the dark chocolate and 1 cup of the sweetened condensed milk into a glass bowl. Melt the chocolate* over a pot of simmering water, stirring regularly, stir until melted through.

  3. Remove from the heat and stir in the vanilla extract and 1/4 tsp of the peppermint extract.

  4. Add half of the dark chocolate mixture to the baking dish and evenly cover the bottom. Place in the fridge for 15 min.

  5. In new bowl add in the white chocolate and the rest of the sweetened condensed milk. Heat over the simmering water until smooth. Remove from the heat and stir in the rest of the peppermint until combined completely.

  6. Remove the dark chocolate from the fridge when ready and add the white chocolate. Smooth and level and return to the fridge for another 15 min.

  7. When the white chocolate is ready, rewarm the other half of the dark chocolate mixture and add. Smooth out nicely and return to the fridge for a couple of hours or up to overnight.

  8. Slice into desired size pieces and enjoy! Or give as gifts :)

*Melting the chocolate - Place the chocolate chips into a glass bowl and place over a pot of simmering water. Making sure not to let the water touch the bowl. Slowly melt the chocolate over low heat. The chocolate should be warm to the touch but not hot. Stir regularly until no chips remain. Add in the extract and stir until creamy.

For the microwave version - Heat the chocolate chips in 30 second increments, stirring between each time until smooth. Add in extract and stir until creamy.
